If you are looking for a healthy fall recipe. This pumpkin spice muffin recipe is great for those who need a quick breakfast. Have 1-2 muffins with a cup of coffee!

Pumpkin Spice Muffin Recipe:

Dry Ingredients:
3 Cups Rolled Oats
1.5 tsp Pumpkin Pie Spice
1.5 tsp Cinnamon
1 tsp Baking Powder
1/2 tsp Kosher Salt
1/4 Cup Chopped Almonds (Walnuts are another option)
1/4 Cup Raisins

Wet Ingredients:
2 Eggs
1/4 Cup Agave (Honey is another option)
1 1/4 Cup Cashew Milk (Any [Milk Almond, 2%, Vitamin D] are options)
1/2 Cup Pumpkin Puree

Directions:
- Grease muffin pan / Preheat oven to 350F / 176C
- Combine Dry Ingredients into a bowl and mix together (set aside)
- Combine Wet Ingredients into a bowl and whisk together
- Pour the wet into the dry ingredients bowl and mix thoroughly (Set aside for 5 minutes)
- Mix in Almonds and Raisins into the mixture
- Pour 1/4 cup of muffin mix into each muffin spot
- Put muffin pan into the oven for 20-25 minutes or until golden brown
- Once muffins are done, remove from oven and allow to cool for 10 minutes
- Remove muffins from pan and enjoy!
