In this video I explain how to do sauerkraut. It's a simple process. In cooler months as in this video you can use less salt. If using a brine solution two tablespoons of salt per quart of water. In the summer you use three tablespoons per quart. Do not use tap water. The chlorine will kill the lactobacillus on the cabbage and you will end up with horrible smelling slop.
