Best Vegan Coconut Cake (CHEAP, EASY, QUICK)

RECIPE

Ingredients:
1.5 cups of self raising flour (SRF) (or substitute with a paleo flour to make this recipe paleo)
1.5 cups of desiccated coconut
1.5 cups coconut milk
0.5 cups brown sugar (or substitute with a paleo sweetener to make this recipe paleo)

Method:
Preheat oven to 200C
Mix all ingredients together until batter has a consistent texture
Pour mixture into a lined cake tin
Put cake tin in preheated oven for 40 minutes (or until cooked)
Remove, let cool, and serve with coconut cream and jam!

It's also delicious as plain coconut bread, as a snack, a meal, covered in coconut butter, vegan chocolate sauce... YUM!
