Before this video, I did not know what a Baumkuchen is. Now, I LOVE IT! You should double this recipe for larger rice cooker or oven baking. I highly recommend baking the layers separately and adding the Nutella. Yummy!

Baumkuchen (Tree) Cake In A Rice Cooker? | Is It Possible | EASY RICE COOKER CAKE RECIPES

NOTE:
* 1 cup = 250 ml

INGREDIENTS:
• 2 EGG WHITES
• 2 EGG YOLKS
• 2 tbsp (22g) DARK BROWN SUGAR
• 2 tbsp (35g) MILK
• 1/3 cup (90g) UNSALTED BUTTER (melted)
• 1/4 cup (35g) CAKE FLOUR
• 1 1/2 tsp (8g) VANILLA FLAVOR
• 1 tsp (5g) ALMOND FLAVOR (or dark rum)
• Nutella, peanut butter, jam, custard

CHOCOLATE GLAZE:
• 1/2 cup (4oz/70g) SEMI-SWEET CHOCOLATE
• 1 tbsp (15g) COCONUT OIL

HOW TO MAKE IT:
1. In a cleaned mixing bowl, beat egg whites for 30 seconds then add half the sugar. Beat until stiff peak, about 3 minutes or so
2. In large mixing bowl, beat egg yolks and the rest of the sugar
3. Add vanilla and almond flavoring (or dark rum) and mix for 15 seconds. Then add the melted butter gradually, in thirds, as you beat. Now add the milk gradually. Beat for another 1 minute
4. Add half the flour and mix about 30 seconds then add all and mix until combined
5. Using a wired whisk or spatula, slowly incorporate the whipped egg whites into the batter in thirds
6. Grease the bottom of the pot/pan and place a parchment paper in it. I am using a 1/3 measuring cup to get equal amount of batter so my layers will be about the same size
7. Grease the parchment paper and pour in the batter; tilting and rotating the pot/pan to distribute the batter all over the bottom. If baking in oven, go to OVEN BAKING below
8. Cover with a paper towel and bake for 5 minutes
9. Turn onto cooling rack
10. Spread Nutella (peanut butter, jam, custard) on the layer. This will help keep the layers together. Keep your layers on a cooling rack but covered to prevent it from over drying
11. Repeat steps 7-10 until all your batter is done. Leave the last top layer plain. Place the cooling rack inside a bowl or on a tray or parchment paper to catch glaze run over
12. For the chocolate glaze, microwave 1 minute or cook on low heat until the chocolate melts. Mix well and pour it over the cake; guiding and spreading the glaze onto the sides as well
13. Let this cool and set for 1 hour before cutting. Store leftover tightly cover in the refrigerator

OVEN BAKING:
1. Set your oven to BROIL (must be top broiler)
2. Place your pan with the first layer under the broiler for 1-2 minutes, until brown on top
3. Pour in the next layer and repeat the bake process until all your batter is gone
4. After baking, let it cool for 15 minutes
5. Then loosen the sides and turn it onto a cooling rack. Let it cool for another 30-40 minutes before glazing.
