Ingredients:
650 g potatoes
½ tbsp salt
2 tbsp cornstarch

Cheese sauce:
2 tbsp butter
½ tbsp flour
1 tsp sriracha sauce
120 ml milk
100 g shredded cheddar cheese
½ tsp salt

Instructions:
1. Cut the uneven part of the potato. Cut the potato into rectangular shapes. Cut it however thick or thin you’d like.
2. Soak the potatoes in cold water for 15 minutes to remove the starch.
3. Drain the potatoes. Boil water, add salt, and cook the potatoes for 5
minutes. If your potatoes are cut thinly, then cook for 3 minutes.
4. Drain the potatoes and rinse them with cold water.
5. Pat the potatoes dry.
6. Put the potatoes in a Ziplock bag. Add cornstarch and shake gently. Put
the potatoes in the freezer.
7. Heat the pan to medium heat. Melt the butter in the pan, then add flour
and sriracha sauce to stir. Slowly whisk in the milk. Next, add in cheddar
cheese. Continue to mix until the cheese is melted.
8. Heat the oil to 350 F. Fry the potatoes for 3 minutes. Take out and cool down.
9. Reheat the oil to 350 F. Fry a second time for 2 minutes. Take out and sprinkle with salt.

作法:
1.切掉馬鈴薯不平整部分。將馬鈴薯切成長形厚或自己決定。
2.將馬鈴薯在冷水中浸泡15分鐘以去除澱粉。
3.排乾馬鈴薯。將水煮沸,加鹽,煮馬鈴薯5分鐘。如果你的
馬鈴薯切成薄片,然後煮3分鐘。
4.馬鈴薯濾水,然後用冷水沖洗。
5.拍乾馬鈴薯。
6.將馬鈴薯放入袋中。加入太白粉並輕輕搖動。將馬鈴薯放入冷凍。
7.中火將鍋加熱。將奶油融化在鍋中,然後加入麵粉和sriracha醬攪拌。
慢慢攪拌牛奶。接下來,加入切達干起司。繼續攪拌直到起司變軟
融化了。
8.將油加熱到180攝氏。將馬鈴薯炸3分鐘。取出並冷卻。
9.將油加再熱到180攝氏。第二次油炸2分鐘。取出並撒上鹽。
