Chicken Broccoli Bake

1 lb Penne (or something similar Zit, Rigatoni etc.)
Olive Oil
1 Medium Head of Broccoli - cut in florets and cooked
Small Onion - diced
2 - 3 Cloves Garlic - minced
2 Whole Boneless Chicken Breast - sliced in 1" pieces
1 Egg
2 lbs Ricotta Cheese
3/4 C Grated Parmesan Cheese - divided
12 oz Can Evaporated Milk
1 Tbsp Fresh parsley - chopped
2 C Mozzarella Cheese - divided
1/2 tsp Red Pepper Flakes

Cook pasta slightly under done so it doesn't get overcooked in the oven. Set aside

In a large skillet drizzle olive oil. Add chicken, season if needed. Cook until no longer pink.

Whisk the egg in a large bowl add ricotta cheese until well incorporated. Stir in 1/2 cup grated parmesan cheese and can of evaporated milk, stir until combined. Add in parsley.

In a large pot or bowl place cooked pasta, add broccoli, 1 cup of mozzarella cheese & broccoli. Add in cooked chicken & red pepper flakes. Pour over the cheese mixture and mix well.

Spread evenly into a 9 x 13 baking dish. Top with the remaining 1/4 cup grated parmesan cheese and remaining 1 cup of shredded mozzarella cheese.

Bake @ 350 for 20 minutes.
