Best Bread Ever - Focaccia!!! - EP 5

This is a time-consuming yet simple recipe:
7 cups unbleached bread flour
3 1/2 cups water heated to 110F (105-115F is will work)
1 tsp active dry yeast
2 T coarse salt
3/4 cups olive oil
Mix flour, water, and yeast in a large mixing bowl until you have a mixed sticky dough. Scrape down sides of bowl. Cover bowl with plastic wrap. Set in warm place for 2 hours.
Add salt, and mix well again. Turn out onto well-floured surface. Use a bowl scraper to get all the dough. Fold (do not knead) from each side to the middle, fold from the top to the middle and from the bottom to the middle. Lightly flour bowl and return dough to bowl, seam side down. Cover with plastic wrap and set for 1 hour.
Turn dough out onto floured surface again and repeat folding. Return to bowl and cover with plastic wrap. Set for 1 hour.
Preheat oven to 425F.
Pour 1/2 cup oil onto 11x17 sheet pan ( I use cooking spray & then parchment paper & pour olive on that). Pour out dough onto pan & cover with plastic wrap. Let rest 10 minutes. While plastic wrap is still on dough, spread dough out to reach all corners of pan, tucking oil back under dough as needed. Remove plastic wrap.
Sprinkle more coarse salt over top & drizzle remaining 1/4 cup olive oil over top.
Bake on middle rack in oven 25-30 minutes, rotating pan halfway between time. Bake till a golden brown.
Remove bread from pan to a cooling rack & drizzle any remaining oil in pan over top of bread.
NOTE: I only use about 1/2 cup olive oil — 1/4 in the pan & 1/4 to drizzle over top. It’s a lot of oil, but you use your own judgement — you know what you like!
