Jalapeño popper omelette:

Three eggs scrambled in a bowl with a tablespoon of water
1/4 cup 0% fat Greek yogurt
1 1/2 tbs whipped cream cheese, or 1 tbs regular cream cheese
A whole bunch of jalapeños (I use the jarred kind but you can use fresh if you prefer)

Mix together cream cheese, Greek yogurt and chopped up jalapeños. Cook egg scramble until cooked through without stirring. Fill the omelette with the cream cheese mixture and fold over omelette. Continue to cook for 20 seconds on each side. Serve and enjoy!
