This was the most AMAZING MEAL!! Oh my word...I'm still reeling over it. I can't wait to have it again!!

Toasted 1/2 sourdough or sprouted English Muffin
Poached Egg
Ham Slices
Asparagus
Hollandaise

For the Hollandaise, I used this recipe:

1 large egg yolk
1 tsp freshly squeezed lemon juice
3 tbsp unsalted butter
¼ tsp sea salt1 small pinch ground cayenne
Whisk the egg yolk and lemon juice together and then continue to whisk in a glass bowl over simmering water (double boiler) until thickened (happens pretty quick), drizzle slowly three tbs melted butter and continue to whisk until thickened and creamy and DELICIOUS! Add seasonings.
