Hawaiin Fried Rice with Sweet and Sour Sauce!

Rice:
1 bag cauliflower rice (I used one with mushrooms and asparagus in the mix)
1/4 cup broth
1 cup seasoning blend
1 small can of mushrooms (use fresh if you’d prefer)
3 cups cooked brown rice
1 cup fresh pineapple chunks
2 TBS Braggs Aminos (use soy sauce if you prefer)
1 tsp crushed garlic
2 cups cooked/cleaned shrimp (use chicken breast is allergic to shrimp)
1/2 egg whites

Use large skillet. Sauté seasoning mix in a bit of cooking spray. Add riced cauliflower and broth and cook until tender and liquid is gone (7-8 minutes). Add everything else except eggs whites and fry for a few minutes. Move rice to side of pan and egg egg whites. Scramble and when cooked, mix with rice.

I like to fry mine long enough that the bottom gets a bit crispy. Then mix and it’s done. Top with sweet and sour sauce.

Sweet and Sour sauce:
9 TBS tomato sauce
2 TBS ACV
5 TBS super sweet
1 tsp blackstrap molasses
1 cup fresh pineapple

Blend together until smooth. Simmer small saucepan until it reduces a bit. Maybe 3-4 minutes. Drizzle over rice.
