How to make Lobby
There are many different versions of this, and here's one of them. Most of the recipes of this are handed down through families, so you won't find them in cookbooks as such. Especially from the potteries districts, where this is from.
Full recipe:
600G STEAK
4 LARGE POTATOES
1 SWEDE OR 1 LEEK
4 CELERY STICKS
4 CARROTS
1 ONION
2 OXOS
4 TB-SPOONS HP OR WORCESTERSHIRE SAUCE
CUP OF SOAKED BARLEY & BROTH.
FLOUR, SALT & PEPPER.

The night before, soak 1 cup of barley in 3 cups of water with a shot of rum or whiskey. Cover and sit overnight.
In the morning, dice meat and roll in flour. Seal edges in a frypan on high, with chopped onion and leek until browned.
Don't strain the barley mixture.
Put it into the bottom of the pot / slowcooker first.
Crush OXOs into it. Add pinch salt and pepper.
Put contents of frypan in next (meat, onion and leek).
Sauce on top of meat.
Then sliced carrots and celery. Then quartered potatoes.
Add water until it's just covering the potatoes.
8hrs slow cook or on the hob on low.
