Yogurt is a food produced from the bacterial fermentation of milk. The fermentation of lactose by these bacteria produces lactic acid which acts on milk proteins to give the yogurt its specific texture and flavor. Around the world, cow's milk is used more to make yogurt, but buffalo, goat's, sheep's or camel's milk is also used in different parts of the world.
