Fish Balls in Tomato Sauce

Fish balls are such a great alternative to meatballs — they’re just as easy to make, but are much lighter. Cooked in tomato sauce these fish balls are packed with flavor and are so quick to put together. We never get bored of having them!
INGREDIENTS
3-4 tbsp. Extra Virgin Olive Oil
1 small yellow onion, finely chopped (about 1 cup)
2 lb. skinless fish fillets (cod, tilapia, salmon) and scallops
1/4 cup butter, melted
2 large mushrooms
1/2 Yellow pepper
1/2 cup carrots
¾ tsp. Pink salt
¼ tsp. Black Pepper
1 egg
1 cup Tomato Pasta Sauce
1 tbsp. Sundried Tomato Pesto
1/2-1 cup Water
- prepared pasta, rice, couscous or bread, for serving
