West Virginia Pepperoni Rolls - Calzone recipe
West Virginia Pepperoni Rolls using Amelia “Maw Maw” Brown’s Calzone Dough
Servings: 6 large rolls or 9 smaller ones.
Preheat oven to 450 degrees Fahrenheit
• 2.5 tsps. active dry yeast (1 pkg)
• 1 C warm water (test on the inside of your wrist)
• 2 Tbls. sugar
• ½ C vegetable oil (I used olive oil in this recipe)
• 1.5 tsp. salt (I use sea salt but any type of salt will work)
• 3 C all purpose flour (I use Unbleached flour)
• 6.5 oz. pepperoni (stick or sliced depending on preference)
• 3 oz. mozzarella cheese chunks (bit sized) You can use any cheese preference in this recipe.
• 3 Tbls. of melted salted butter
Mix yeast, warm water and sugar together in a large mixing bowl. Let it sit for about 15 minutes or until it has a foam on the top.
Add in vegetable oil and mix.
Add in flour and salt to wet yeast mixture and mix well. Once the dough is able to be shaped into a ball, remove from the bowl and knead until you have a “springy” consistency and all the flour is well incorporated.
Place the dough in a greased bowl, cover with a towel and place in a warm area to rise for 1 hour.
While your dough is rising, cut your pepperoni into sticks about 2.25 inches in length. At this point, you can also cut your cheese to length if you are including it in the roll.
Once your dough has risen, section it into 6 equal parts. Shape into a rectangle for your pepperoni rolls (4.5 inches X 6 inches). Place your pepperoni on to the beginning end of the dough and roll once to cover, put the next pepperoni stick at the crease and roll again, repeat this step one last time to have 3 sticks of pepperoni (this is where you would alternate cheese if desired). Seal the bottom seam and pinch the ends so that all the moisture from the pepperoni stays in the roll.
Place seam side down on a parchment lined baking sheet about 1.5 inches apart and let rest for 20 to 30 minutes.
Before baking, baste the tops of the rolls with salted melted butter.
Place in a 450 degree oven and bake until golden brown, approximately 14 to 17 minutes depending on your oven.
Remove and enjoy. These are great for dipping in marinara sauce, pizza sauce or any other type of dip that you prefer.
