Baked Chicken with Tomato and Mozzarella

A do ahead, really good dish. This freezes well too. What's not to like!
This is very "child" friendly and one you will want to make extra of. Saute, Sauce, Cheese, Bake...simple as that. Actually pretty darn healthy too....
