Keto Carrot Cake

I gave up sugar a little more than a year ago and I am trying to stay away from carbs, so I decided to adapt a carrot cake recipe from Robert Clinton of Cliftons that was featured on Rachel Ray's Tasty Travels. I used almond flour instead of pastry flour and butter instead of margarine as well as monkfruit sweetener instead of sugar. My icing skills are non existent, but the cake was for my birthday so I guess it's OK, and besides the cake is delicious!
