This REALLY tasted Christmas!
Red cabbage Christmas Sauerkraut:
Mix one Red cabbage with 20ml Himalayan Salt (no iodine) and I put some bay leaves, cloves and allspice in it. Let i stand for 15-minutes or some hour and then stamp it soft. Then put it in a jar. You need to have a lid that can leak or open it 2 times per day, and it should be put in a dark room temperatured place. Then wait some weeks.

I took a little bit too much cloves for my taste, but one gets used to it.
