Menudo is the name shared by various stews made with beef belly. With some exceptions, in the northern states of the country they prefer to call it small; in the center pancita or mole de panza, and in the south and the Yucatan peninsula, tripe.<br/><br/> It is a generally soupy dish, although it can be served semi-dry and some ingredients vary depending on the region, there are some places where corn is added, like pozole.
