Eggs and Vegetables

Ready in less than 30 minutes!

Ingredients
3 large eggs, lightly beaten with drop of cold water
1 cup chopped red and yellow peppers
1 cup sliced green and white onions
1 cup spinach
1/8 teaspoon garlic
1/4 teaspoon salt
1/8 teaspoon pepper
3 small tomato, chopped
2-4 tablespoon avocado/olive oil

Directions
Heat olive or avocado oil in a skillet or frying pan over medium-high heat. Add onions and peppers; sauté until onions are transparent.
Stir in tomatoes and spinach.
In a mixing bowl, beat together eggs, salt, pepper and garlic.
Add egg mixture to vegetables. Cook until eggs are set.
Serve immediately.
