This is a very unique sweet sticky and very filling snack which is very good for breakfast or coffee break. For a healthier version you can omit the refined sugar and substitute coconut sugar. You can even omit the ube flavor and just use vanilla. If banana leaves are hard to find you can just use cake pan. Grated cassava and banana leaves are available at any Asian super market or just use fresh cassava root and grate it yourself.
