Souvlaki

In Greek, the word Souvlaki (which is the skewer itself) comes from the word ‘Souvlao’ (σουβλάω) which means to prick through something. That also comes from the word ‘Souvla’ (σούβλα) which is the spit.

Souvlaki is a Greek specialty made with tender cuts of meat. In this pork kebab recipe, the meat is marinated in a lemon olive oil and oregano mixture.

Ingredients

For The Skewers:

1 kilo and 500 grams pork loin

1/2 cup lemon juiced

3/4 cup extra virgin olive oil

1 tbsp. dried oregano

1 tbsp salt

1 tsp. ground black pepper

8 wooden skewers

Cut the meat into pieces.

Thread the meat on the skewers.

Marinade for 2 hours or Overnight (ideally).
Grill.
