EGGPLANTS ON MY WAY !! YUM YUM - MELANZANE A MODO MIO
INGREDIENTS:
-3 eggplants
- salt- oil as required
-1 chilli
-3 cloves of garlic
1 tablespoon of minced ginger
-1 handful of parsley
-1 teaspoon of cumin
-2 fresh tomatoes.
FOR THE PREPARATION:
Cut the aubergines into cubes, put in a colander, salt and let drain for 5 hours. Grease the pan and put in the oven for half an hour at 24 degrees, mix 2 times. In a pan put some oil, chilli, l garlic, ginger and parsley, sauté for 2 minutes and add the aubergines. Leave to flavor for another 2 minutes and add the tomatoes. Leave to cook covered for another three minutes, in the meantime stir and it is ready.
INGREDIENTI:
-3 melanzane
- sale-olio quanto basta
-1 peperoncino
-3 spicchi d'aglio
-1 cucchiao di zenzero tritato
-1 manciata di prezzemolo
-1 cucchiaino di cumino
-2 pomodori freschi.
PER LA PREPARAZIONE:
Tagliare le melanzane a cubetti ,mettere in una colapasta ,salare e lasciare scolare per 5 ore.Ungere la teglia e mettere in forno per mezz'ora a 24 gradi ,mescolare 2 volte.In una padella mettere dell'olio,il peperoncino, l'aglio,lo zenzero e il prezzemolo ,rosolare2 minuti ed aggiungere le melanzane.Lasciar insaporire altri 2 minuti ed aggiungere i pomodori .Lasciare cuocere ancora tre minuti coperto ,nel frattempo mescolare ed è pronto.
