Amazing Low Carb Sugar Free Ice Cream [ Keto-friendly ]

Dust off that ice cream maker and find a new prominent spot for it on the counter because I guarantee you will make this ice cream over and over again.

I came across this recipe on Food52.com a while ago, but it was neither sugar free nor keto-friendly. So I've made some adjustments and here we have the best tasting home made ice cream ever.

The ingredients for my version are:

1 and 1/2 Cups Whole Milk Ricotta Cheese
1 Cup Fairlife Whole Milk [This milk is LOW CARB!]
1 Cup Confection Style Swerve Sweetener
2 Tablespoons RUM
3 Ounces of Cream Cheese
Dash of Salt
1 Teaspoon Vanilla Extract
1 Cup Heavy Whipping Cream
1/4 Cup Russell Stover Sugar Free Chocolate Chips

Mix all the ingredients EXCEPT FOR THE HEAVY WHIPPING CREAM together in a mixer, in a blender, with a whisk. Whatever you have. Mix them until they are smooth. About a minute.

Then, add the heavy whipping cream, but this time mix it on low for just about 30 seconds. You don't want to overmix, just incorporate the cream.

Pour the mixture into your ice cream machine and turn it on. My Cuisinart takes about 35 minutes, your machine may be different.

Five minutes before your ice cream is done, add in the Sugar Free Chocolate Chips.

That's it! You're done and ready to impress the family with your amazing ice cream!
