Poolish: (dough 1)
1 cup water (room temperature)
1 1/2 cup all purpose flour
1/4 tsp instant yeast
Final dough:
1/2 cup water
1/2 tsp instant yeast
1/3 cup olive oil
2 1/2 cup all purpose flour
1 1/2 tsp salt

1st proofing: 8-10 hours (fermentation)
2nd proofing: 1 hour
3rd and last proofing: 1 hour
