Christmas Ginger Cookie (Malayalam)
GINGER COOKIE CUP GRAM
(10-12)
Wheat Flour 1 250
Ginger 2tbs 30
Milk 1/4 50ml
Butter 1/2 250
Vanilla 1/2tsp 2.5ml
Confection Sugar 1/2 150
Baking Soda 1/2tsp 5
Nutmeg 1/2tsp 2
1)Mix together all the dry ingredients, except the sugar
2)In a large bowl, sift the mix to remove the lumps
3)Melt the butter to a mostly liquid state, but leave the texture creamy
For best results do not use hot butter, let it cool over 10 minutes
4)Mix the butter, icing sugar and vanilla essence until smooth
5)Put the wet and dry mixes together, stir until thick dough forms
6)Add the milk in this stage and finish mixing
7)Portion the dough onto a cookie sheet.use a scooper to make equal cookies
8)Preheat the Oven to 180c/360f
9)Bake for 15-20 minutes
Cookies should be firm on the outside with a golden brown base.
Serve as is or add some icing!
