HOW CHRISTMAS PLUM CAKE AT HOME

1.Mix together flour, baking powder and baking soda
2.Sift together until there are no lumps
3.Add Glucose and honey into fruit mix and mix well
4.Mix the dry fruit into the flour.Mixing these separate from the cake mixture will help spread
the fruit evenly
5.Add the vanilla essence into the eggs
6.Mix together butter, brown sugar and ghee, Slowly add eggs one by one

7.Use the cake pan to measure a portion of the parchment, draw the outline
and cut it out. This will go at the base of the cake pan to make it easy to remove
8.Cut a length of parchment and fold it in half . Next fold about an inch on one side to cut
9.Make diagonal cuts in the lip of the paper to line the cake pan sides
10.Spread butter in pan and place parchment
11.Starting with the sides, cut your parchment to length as you stick the paper into the corners
12.Place the bottom parchment in the cake mold
13.Mix the dry fruit and flour into the batter portion into the mold, if you don't use a scale,
the baking time will vary
14.Preheat Oven to 160c/320f
15.Bake for Roughly 45-50 minutes

Stick a knife or toothpick into the center of the cake, if it stays dry, its ready!
If you like, add more Rum to the baked cake, this also helps preserve the life of the cake.

Butter. 2. 3/4cup 360gm.
Brown Sugar. 1.3/4 cup. 370gm
Ghee 3tbs 40gm
Egg (whole). 8
Vanilla essence 1tbs. 15gm
Liquid Glucose 3tbs. 40gm
Honey 3tbs. 40gm
Fruit mix 2.1/2 cup. 900gm
All Purpose Flour. 3 cup 400gm
Baking Powder. 1/2 ts. 2.5gm
Baking Soda. 1/2ts. 2.5gm
Rum 1 cup. 200gm
