Beef Stew

Servings: 30, Yield: 45 cups

4 1/2 lbs lean beef -- 3/8" cubes
2 cups tomato puree
4 Tbs real Beef Base
1 cup red wine -- optional
12 cups beef stock
2 each bay leaves, whole
5 lbs carrots -- 3/8" cubes (about 16 cups)
2 1/2 lbs onion -- 3/8" cubes (about 8 cups )
3 Tbs garlic minced
6 lbs potatoes -- 3/8" cubes - Yukon gold (about 17 cups)
1 tsp salt
1/2 tsp pepper
1 Tbs soy sauce
4 Tbs flour
2 lbs green beans frozen -- 1" pieces (about 7 cups)
8 Tbs cornstarch -- in 1 cup of cold water for thickening
salt and pepper -- to taste
Cut beef into small pieces, 3/8" cubes, coat with soy sauce and flour and brown in olive oil in small batches. (worked well on baking sheets in a 375°f oven for 20 minutes)
Add beef to pot with everything except green beans and cornstarch.
Simmer until vegetables are almost tender then add the green beans and the
cornstarch mixed with cold water and simmer 5 minutes more.
Salt and pepper to taste.
