2 hour dry rub and rest, overnight mustard bbq marinade, 7 hr 225 full smoke with wood chips every hour for four hours, triple foil wrap injected with drippings, triple wrapped again back on smoker for 3 hours. 5 hour mark. Spritz with apple cider vinegar
