Buffalo Chicken Calzone
• Boneless Chicken breasts
• Frank’s hot sauce
• Pizza dough, I use Pillsbury pizza dough
• Mozzarella cheese
• Blue cheese
• Red onion- thin sliced or diced
• Cherry pepper rings
• Butter
Here is what I do;
I eyeball everything. I use enough boneless chicken for the four of us, my wife, 2 kids and me. Marinate the chicken breast in Italian salad dressing for a couple hours.
• In a mixing bowl put about ½ cup of Frank’s hot sauce and a 1/3 stick of butter at room temperature, a pinch of salt and pepper. Genially mix
• Grill the chicken to cook it fully. After it’s cooked I cut the chicken into bite size pieces and while still hot drop it into the mixing bowl and mix it about and coat the chicken pieces
o Note you don’t want to drown the chicken but a nice thick coat
• You want a piece of dough that can cover your fist, I put “about ½ cup” of Mozzarella cheese down
• then a couple table spoons of Blue Cheese
• Red onion, Kids hate onion so none for them, Wife like some so a table spoon, me Love them so I load it up
• 3-4 Cherry Pepper ringers
• Buffalo Chicken last divided equally between all the calzones
Fold the sides up and seal the calzone and place it on a greased baking sheet with sealed end down or the cheese side up
Bake 425 for 15-20 minutes.
I have never measured anything more cheese if you like more Mozzarella. The basic ones I make for my girls are Mozzarella cheese and Buffalo chicken one, I load it up for myself
