Steak and Eggs Benedict with Hollandaise sauce on top of A fillet..

Eggs Benedict with Hollandaise sauce

Hollandaise sauce

3 egg yolks
¼-1/2 C water
¼ C white wine- chardonnay
½ of a lemon- juiced
6-7 oz clarified butter
1/8-1/4 tsp Worcestershire sauce
pinch salt
pinch cayenne pepper

In a small bowl mix water, wine and lemon juice. In a metal bowl or double boiler put your egg yolks in add half of your water, wine, lemon mixture. Constantly whisk till frothy. Over low heat. Once it thickens take off the heat. Drizzle in your butter-SLOWLY! When all of your butter has been incorporated add your Worcestershire sauce, salt and pepper.

Now that the sauce is ready you will need

4 slices Canadian Bacon
4 ¼ in slices of filets or other steak
4 poached eggs
salt
pepper

In boiling water poach 4 eggs for 3-5 minutes. Remove with slotted spoon.

Grill filet with salt and pepper or pan fry for 3-5 minutes.
Pan fry 4 slices of Canadian bacon for 2-3 minutes.
Time to put it all together.

Put your filet on a plate, followed by Canadian bacon, then your poached egg drizzle with hollandaise sauce. Enjoy!!!
