This Vegan Skewer is ideal for a Monday with no meat meals, since it doesn't contain any animal product. We show you how to make this easy recipe based on vegetables such as peppers, mushrooms, zucchini, onion and corn. It is full of color and with a lot of vitamin C because of the large amount of red pepper it contains. Serve with tortillas, salsa and lemon. The skewer (alambre) is a typical Mexican dish, usually served in taquerias. You can find it with beef or chicken, with or without cheese and it's usually served in iron pans to keep it warm. You can eat it with corn or flour tortillas, different sauces, lime juice and fresh water or, why not, a beer.
