Lamb shoulder chops are one of the most underrated, budget-friendly cuts you can buy — and once you braise them, they turn into fall-off-the-bone, restaurant-level perfection.
In this video, we’re taking $5–$6/lb lamb shoulder chops and transforming them with a simple braise using carrots, onions, celery… and yes, a little apple to complement that gamey lamb flavor. Sweet + acidic ingredients pair beautifully with ruminant meat and mellow it out without covering it up.
If you’ve never braised lamb before, this recipe is easy, forgiving, and insanely flavorful.
