Make a great gravy for the holidays!

Make a roux of 1/4 cup flour and 1/4 cup butter or turkey fat. Saute in deep frying pan until golden brown. Slowly add 2 cups turkey pan drippings or broth. Continue to cook over medium high hear, stirring continuously until thick enough to coat the spoon. Gravy will thicken more once removed from heat.
