🥩*Meat and Broth*
1 to 2 Lbs. Boneless beef (diced, e.g., shoulder, leg) Stewing cuts like chuck, short rib, or shank, cut into cubes.
2 tbsp Olive oil or vegetable oil or ghee For sautéing.
1 large Onion, finely chopped
4 cloves Garlic, minced
1 tbsp Ginger, minced (optional)
4 cups Water or beef stock (more may be added while cooking) Beef or vegetable broth is ideal for the stew base.

🌶️ *Spices (Key to the Flavor)*
1 tbsp Baharat *Arabic Spice Blend* (B'zar or Baharat): A signature spice mix.
1 tbsp Ras El Hanout (Hoot) (mixed North African spices) It is similar to Baharat. I like to add it in as well. Adds another dimension to the broth.
1 tsp Turmeric powder
1 tsp Cumin powder
1/2 tsp Black pepper
1/2 tsp Cinnamon powder or 1 Cinnamon stick
1 tsp Salt (or to taste)
2 to 3 Dried black limes (loomi), pierced A crucial ingredient for a distinct sour note.
7 Cardamom seed pods
2 Bay leaves
Chili/Curry Powder, to taste (optional, for heat)

🥕 *Vegetables (Vary based on preference)*
1 large Carrots, peeled and roughly chopped
1 medium Zucchini, roughly chopped
1/2 cup Chopped fresh cilantro or parsley (for garnish and cooking)
3 to 4 cups new potatoes, peeled and quartered
1 cup Cubed pumpkin or butternut squash (optional)
1 (14.5 oz) Can of diced tomatoes, undrained or 2 cups of fresh diced tomatoes
2 tbsp Tomato paste

🍽️ *For Serving*
*Arabic Flatbread (Regaag (Regag), Khubz, or Pita):* Torn into pieces for soaking up the stew.
*Fresh Coriander or Parsley:* For garnish.
