Non stir plum jam

Today I'm sharing a recipe for delicious plum jam/plum purée. It's made from fresh plums, preferably late-ripening varieties. Preparation takes many hours, including resting time about a day (24 hours).

Ingredients:
5 kg plums
0.5 kg sugar
Ground cinnamon, ground cloves, ground star anise, ground mace, herbal liqueur
Screw-top jars for filling the jam

Preparation:
Wash and pit the plums.
Layer the plums with the sugar in a saucepan and let it steep at room temperature for 12 hours.
Then bring the contents of the pot to a vigorous boil (do not stir!).
Simmer uncovered over low heat for 5 to 10 hours to thicken the mixture (do not stir!). The cooking time depends on the moisture content of the fruit.
Add spices and liquor.
Puree with an electric blender.
Turn off the heat and pour the fruit mixture into jars rinsed with hot water. Immediately screw on the lids tightly.

The plum jam pairs well with white or brown bread on a layer of butter.
