Blackstone Betty's Avocado Toast on the Blackstone Griddle

Their sourdough-avocado combo hits another level on the Blackstone, especially with that drippy, silky egg on top. She hopes everyone gives it a try at home and makes their own morning feel a little extra special.

Ingredients
2 slices sourdough bread
1–2 ripe avocados, sliced
2 large eggs
1 tbsp butter (plus more for toasting the bread)
Salt and pepper, to taste
Pinch of flaky sea salt, for finishing
2 lemon wedges, for serving
Microgreens, for garnish (optional)
Pinch of crushed red pepper flakes

Directions
1. Preheat your Blackstone griddle to medium-high heat (about 350°F).

2. Lightly butter both sides of the sourdough slices and toast on the griddle until golden on each side. Set aside.

3. Add a little butter to the griddle and crack in the eggs. Season with salt and pepper. Cook sunny-side up until the whites are almost set, then cover with a dome or lid to steam the tops.

4. To assemble, spread a thin layer of butter over each toasted slice. Layer the avocado slices evenly, sprinkle with flaky sea salt, and add a squeeze of lemon juice.

5. Top each toast with an egg. Garnish with microgreens, another squeeze of lemon, and a pinch of crushed red pepper flakes for a touch of heat.
