Vieux Carré (pronounced “view kah-RAY” — “Old Square,” i.e., the French Quarter). A New Orleans classic: rye + cognac + sweet vermouth with a touch of Bénédictine and split bitters. Think Manhattan meets Sazerac—rich, spicy, herbal.

Recipe — Classic (Carousel Bar, 1930s)
- ¾ oz (22 ml) rye
- ¾ oz (22 ml) cognac
- ¾ oz (22 ml) sweet vermouth
- 1 tsp (5 ml) Bénédictine
- 2 dashes Angostura + 2 dashes Peychaud’s

Method: Stir with ice 20–30 sec, strain over a big cube. Lemon twist.

House Spec (bigger glass)
1 oz rye • 1 oz cognac • 1 oz sweet vermouth
¼ oz Bénédictine • same bitters/twist

Tastes like: warming spice, dried fruit, honey-herbal lift, crisp bitters backbone.

Pro tips: Use 100-proof rye if you can, keep Bénédictine restrained, and make sure your vermouth is fresh and refrigerated.
