One-bowl easy Corn Casserole Recipe starts with a corn muffin mix and has an optional topping of bacon and cheddar cheese.
8.5 ounce Corn Muffin Mix
1 Cup Sour Cream
2 Lightly beaten Eggs
15-16 ounces Cream Style Corn
12 ounces (2 Cups) Fresh, Frozen or Canned Corn (drained)
1/2 Cup Melted Butter
Optional Add-ins:
1/3 Cup chopped Chives, Herbs, Jalapeno Peppers, Onion
Optional Topping:
1 Cup Shredded Cheese
5-6 strips Crispy Bacon cut into small pieces
Mix all ingredients in one bowl. Place in a 2-quart casserole dish. Bake at 350F for 45-55 minutes or until golden brown around the edges. Optional Topping should be placed on top of corn casserole about 5 minutes before the casserole is done.
