Sugar cookies: 1 cup (225g) unsalted butter softened, 1 cup (200g) granulated sugar, 1 teaspoon pure vanilla extract, 1 large egg at room temperature, 3 ½ cups (420g) all purpose flour, 1 ½ teaspoons baking powder, ½ teaspoon salt
