Delectable Crustless Breakfast Quiche Recipe
Put some of your favorite Breakfast Items together and you get a delectable Crustless Breakfast Quiche.
Crustless Breakfast Quiche
Ingredients:
6 Eggs
3/4 cup Half & Half
1/3 cup Milk
1 tsp Italian Seasoning
1/4 tsp Salt
1/4 tsp Pepper
1 tsp Dijon Mustard
1 sm Red Onion, halved & sliced
2 tbsp Parsley, chopped & divided
3/4 cup Monterey Jack Cheese, shredded
6-7 slices Bacon, cooked & chopped
(reserve Bacon Drippings)
2 cups Potatoes, small diced
Sauté the Potatoes in the Bacon Drippings, season with small Pinch of Salt & Pepper.
Add Onions and sauté.
Incorporate Bacon and half of the Parsley, set aside.
Coat deep (9") Pie Dish with Butter.
Preheat Oven 350°F.
Combine Eggs, Half & Half, Milk, Italian Seasoning, Salt, Pepper & Mustard, whisk well.
Spread out Potato Mixture on the bottom of the Dish.
Top with Cheese.
Slowly pour Egg Mixture over everything.
Sprinkle with remaining Parsley.
Bake 40-45 Minutes or until set.
(Tip: if it gets to golden, cover with foil)
Rest on Wire Rack, serve roomtemp or cold.
Enjoy!
