Chicken Stew has tender chicken and veggies simmered in a flavorful broth. It’s simple yet fills you up in a really good way. Pair it with some crusty bread and you cannot get more cozier than that!

Chicken Stew

Ingredients
1 1/2 lbs boneless skinless chicken thighs
1 onion, diced
4 garlic cloves, minced
3 tablespoons flour
3 cups chicken broth
1 lb potatoes, cut into small chunks
3 large carrots, sliced
2 cups peas

Directions
Slice chicken thighs in half and season both sides with salt and pepper.
Heat oil in a pan over medium high heat and sear chicken smooth side down for 4 minutes. Flip over and cook for another 3 minutes. Remove and set aside.
Reduce heat to medium and add onions and garlic. Cook until softened, about the 3 minutes.
Stir in flour.
Gradually stir in chicken broth.
Add carrots and potatoes and season well with salt and pepper.
Return the chicken back to the pan and bring to a boil. Lower the heat to medium low cover and let simmer for 15 minutes.
Stir in peas, cover and let simmer for another 5 minutes or until potatoes and carrots are tender.
