How to make Delicious Vanilla Raspberry Cupcakes

If you are looking for a Cupcake without Frosting, try this delicious Vanilla Raspberry Cupcake and crown it with a small dollop of whipped Cream.

Vanilla Raspberry Cupcakes
Ingredients:
1-1/2 cups Flour
1/2 tsp Salt
1-1/2 tsp Baking Powder
1/2 cup Butter, soft
2/3 cup Sugar
2 Eggs, roomtemp
1-1/2 tsp Vanilla
6 oz Very Vanilla Yogurt
2-3 oz Raspberry Preserve
12 Cupcake Liners

Place Cupcake Liners in Tin.
Preheat Oven 350°F
Combine Flour, Salt and Baking Powder, whisk well.
Cream Butter and Sugar together.
Add one Egg at a time and Vanilla.
Scraping down sides of the bowl.
Incorporate half of the Flour Mixture, Vanilla Yogurt and the rest of Flour Mixture.
Scraping down sides of bowl.
Equally fill each cup with Batter.
Top each with (approx. 1/2 tbs) of Raspberry Preserve and swirl.
(TIP: easy way to distribute Preserve is to put it in a small plastic bag and cut off a tiny tip of the corner)
Bake 20 - 22 Minutes or until tester comes out clean.
Rest in Tin for 5 Minutes.
Cool completely on Wire Rack.
Serve topped with whipped Cream. (optional)
