My kitchen smells like heaven with this one! 🥕✨

This is my Carrot Cake Drizzle Loaf — adapted from Easy Peasy Foodie — and made my own by swapping olive oil for butter and replacing the cream cheese frosting with a light drizzle icing. It’s soft, perfectly spiced, and the aroma alone is worth baking it for!

This recipe makes two loaf cakes, but you can easily halve it for one. Simple, cozy, and perfect for an afternoon tea or a sweet weekend bake.

Ingredients:

* 200g softened butter
* 4 eggs
* 4 tbsp milk
* 325g dark brown soft sugar
* 250g grated carrots
* 75g chopped walnuts
* 2 tbsp cinnamon
* 350g self-raising flour

* 100g icing sugar (for drizzle)
* 4 tbsp water (for drizzle)

Method:

1. Preheat oven to 160°C. Grease and line your loaf baking tin with baking paper.
2. Cream together butter, eggs, milk, and sugar until light and fluffy.
3. Stir in grated carrots, chopped walnuts, cinnamon, and flour until well combined.
4. Scoop half the batter into the prepared tin and bake for 1 hour 15 minutes.
5. Let the first loaf cool, reline the tin, and bake the second half of the batter.
6. Cool both loaves on a rack for at least an hour.
7. Mix icing sugar with water for the drizzle — pour over cooled cakes and let it set.

This cake is fragrant, moist, and beautifully simple — and your kitchen will smell amazing!
