You need:
1.) organic lemons
2.) sea salt

Instructions:
1. Wash your lemons
2. Cut your lemons. You can either thinly slice or slice them into quarters, without cutting all the way through so that they stay intact.
3. If you’re using quartered lemons, fill them with salt generously and add them to a glass jar.
4. If you’re using sliced lemons, layer them with generous amounts of salt, add a few slices then a sprinkle of salt, until they’re all in the jar
5. Mash down the lemons to squeeze out of the juice until the lemons are under the lemon juice.
6. Place a loose lid on top to cover and leave it on your counter for 3-4 weeks. Ensure the lemons are submerged under the juice the whole time.
7. Once they are done fermenting, secure the lid and place in your fridge where they will stay good for
