Baja Fish Tacos

Bring Baja California into your home with this recipe. The sauce has a hint of spice with a kiss of smoke. The fish is fried in a crispy soft batter similar to tempura, and topped with a flavorful, refreshing, authintic curtido. This will WOW any fish taco lover.

☆Recipe☆

-Chipotle Crema-
•1 Cup Mayonnaise •2 Chipotle Chilis •1 TBSP Adobo Sauce
•2 Garlic Cloves •Pinch of Salt •Juice of 1 Lime
*Place all ingredients in a blender and blend until everything is incorporated.

-Curtido-
•⅓ Head Green Cabbage •¼ Onion, chopped •¼ Jalapeño
•½ Cup White Vinegar •¾ Cup Water •½ tsp Oregano
•1 tsp Salt •Black Pepper, to taste

-Batter-
•1 Cup A.P. Flour •1 Cup Beer •1 tsp Baking Powder
•1 tsp Salt •1 tsp Chili Powder •Black Pepper, to taste
•1 Pound of Fish •3-4 Cups Fry Oil

*Fry fish between 350°F-360°F until golden brown. About 3-6 minutes. And serve on corn tortillas with all of the fixings.
