EASY 2-Ingredient Ice Cream (No Machine!)
Easy 2-Ingredient No-Churn Plombir Ice Cream (500 ml Cream)
This is the simplest way to make incredibly creamy ice cream at home without an ice cream maker. The high fat content of the cream and the sugar from the condensed milk prevent large ice crystals from forming, giving you a smooth, traditional plombir texture.
Ingredients (Weight and Volume)
Heavy Cream (33-35% fat): 500 ml (or 500 g). Crucially, it must be very cold!
Sweetened Condensed Milk: 170 – 180 g (about 125-130 ml). Use 170 g for moderate sweetness, or 180 g if you prefer it sweeter.
Vanilla Extract: 1 teaspoon (about 5 ml). Optional, but highly recommended for the classic flavor.
Step-by-Step Instructions
Preparation: Place your mixing bowl and the whisk attachments of your mixer into the freezer for 10–15 minutes. This is essential for achieving maximum volume when whipping the cream.
Whip the Cream: Pour the 500 ml of very cold heavy cream into the chilled bowl. Begin whisking on low speed, gradually increasing to high. Whip until the cream forms stiff peaks—it should be a thick, airy mass that holds its shape when you lift the whisk. Be careful not to over-whip, or you will end up with butter.
Add the Base: Stop the mixer. Gently pour in the 170–180 g of sweetened condensed milk and the vanilla extract.
Fold (Do NOT Beat!): Use a spatula and manually fold the mixture. Use a cut-and-fold motion (bringing the mixture from the bottom up and over) until the condensed milk is just combined with the whipped cream. The final mix should still be very light and airy; overmixing will deflate the volume.
Freeze: Transfer the creamy base into an airtight, freezer-safe container. Place the container in the freezer for a minimum of 6–8 hours or overnight until completely firm. No stirring is required during the freezing process!
Serve: For the best texture, remove the ice cream from the freezer about 5–10 minutes before serving. This allows it to soften slightly, making it perfect for scooping.
