For Round 17, we're landing in the vibrant host city of Baku, Azerbaijan, to tackle a national culinary treasure: *Chicken Lavangi.*

*Join me on my F1 2025 75th Year cooking journey as we explore the flavors of the world! This week, we're in Azerbaijan for Round 17 FORMULA 1 F1 Azerbaijan GRAND PRIX Prix 2025 race.*

While the traditional dish features a whole stuffed chicken, I'm excited to share my weeknight-friendly spin: a *Walnut and Plum Stuffed Chicken Breast with a Twist*. This version captures all the rich, sweet, and savory essence of the classic in a fraction of the time, making it the perfect pit stop for a delicious dinner.

From the first-class flavors of the walnut and plum stuffing to the golden, tender chicken, this recipe is a true winner.

It's a fantastic way to experience the unique tastes of Azerbaijani cuisine without needing a full-scale culinary race. *So, are you ready to get started?*

*INGREDIENTS*
â–¢ 2 medium onions, pureed and the water extracted out of the pureed mixture.
You can place it in a cheesecloth and wring out the moisture.
*Do not throw out the onion water.* You can use it in another recipe. It is a flavor bomb!
â–¢ 3 tbsp dry raisins, any kind.
Soak them in room temperature water for a minimum of 30 minutes.
▢ ½ cup dried pitted prunes, pre-chop them before puréeing it.
Soak the chopped pitted prunes in room temperature water for a minimum of 30 minutes.
▢ 1 cup walnuts, puréed
▢ ¼ to 1 tsp sea salt, to taste
▢ ½ to 1 tsp pepper, to taste
â–¢ 1 tbsp garlic powder or a Garlic Herb mixture.
We love garlic flavor. You can reduce the garlic powder to â…“ tsp. But, really try to keep it in the recipe.
â–¢ 2 tbsp Ghee, clarified butter.
You can use regular butter but melt it before combining it into the walnut, onion, prune mixture.
â–¢ â…” cup plum preserves or plum jam. *MY TWIST: I used Sour Cherry Jam instead.*
â–¢ 4 large skinless boneless chicken breasts

*Optional*
â–¢ Olive Oil Spray, optional. I use it to spray the aluminum foil on the roasting tray to prevent the meat from getting stuck. I also spray the roasted chicken breasts 5 minutes before removing them from the oven. *I also do this just before I place the serving tray on the table. The chicken breasts gleefully glisten on the tray.* :-)
