Easy and Delicious Rice and Beans – Ready in 20 Minutes! ⏱️🍴

Ingredients

100 g diced bacon

1 smoked sausage, sliced

2 tablespoons olive oil

2 cloves garlic, minced

½ onion, chopped

1 cup uncooked rice

1 cup cooked beans with a little of their cooking liquid

½ teaspoon sweet paprika (or annatto/achiote)

500 ml hot water

Salt, to taste, and 1 bay leaf (optional)

Fresh herbs to taste (I used parsley)

Directions

1️⃣ Fry the bacon and sausage until golden. Remove and set aside.
2️⃣ In the same pot, sauté the onion and garlic until the onion becomes translucent.
3️⃣ Add the rice and sauté for about 3 minutes, until coated in the fat.
4️⃣ Season with paprika (or annatto) and salt.
5️⃣ Add the hot water and bay leaf. Cook over medium heat for about 20 minutes.
6️⃣ When the water is nearly absorbed, cover the pot and reduce the heat, cooking for about 5 more minutes until fully absorbed.
7️⃣ Remove the bay leaf.
8️⃣ Add the reserved bacon and sausage, stirring gently.
9️⃣ Finish with fresh herbs to taste (I used parsley).
