Roasting Chicory Root

Today I’m roasting some Chicory Root. Smells like warm brownies to me at this stage. We like Chicory coffee, well it’s not coffee but apparently an alternative.
Have you tried chicory coffee?
Have you roasted chicory?

I want to make a recipe called “not coffee” it uses organic dandelion root and chicory root.
So I’m starting with roasting the chicory root to see how to do it. Then I’ll move on the the dandelion roots. Hopefully I’ll find some out back.
