Cottage Pie with Parmesan Potatoes

A shepherd's pie and cottage pie are very similar with one difference: the meat. A shepherd's pie is traditionally made with lamb, while the cottage pie uses beef. Shredding the veggies is the trick to get this pie to hold its shape when slicing, and the whipped potatoes mixed with eggs, cream, and Parmesan give this a fluffy and unique crust topping.

•4 Russet Potatoes, peeled •1 LBS Ground Beef 80% Lean
•2 tsp Salt •2 tsp Black Pepper •2 medium Carrots, grated
•2 Celery Stalks, grated •1 yellow Onion, grated
•2 TBSP Tomato Paste •½ Cup Beef Broth •2 TBSP Red Wine
•1 TBSP W. Sauce •1 TBSP Garlc, minced •1 Cup Corn
•2 Egg Yolks •⅓ Cup Heavy Cream •2 tsp Garlic Powder
•1 Cup Shredded Parmesan Cheese + more for topping
•8 Oz Mushrooms (optional)
